It seems to me you were too focused on processed foods, rather than fruits and vegetables and digging out some decent recipes.
I mean, processed foods aren't great for your health, whether they are vegan or not. If you don't want to cook meals from scratch, your diet won't be as healthy as it might otherwise be, regardless of whether it includes animal products.
I'd have thought your fitness goals could be achieved by exercise alone, and unless you're trying to do weight lifting, a lot of extra protein is unnecessary, but well, those are just my thoughts.
I'm glad you've not abandoned vegan foods completely. :)
